Bar Manager – Elder

Elder is seeking an experienced, driven, and hospitality-focused Bar Manager to lead our beverage operations and join our leadership team.

Elder is a British Indian chophouse concept from Chef Sujan Sarkar, blending bold Indian flavors with the warmth, sophistication, and timeless hospitality of a classic chophouse. We are building a team of professionals passionate about hospitality, beverage excellence, and creating memorable guest experiences.

The Bar Manager role at Elder is responsible for overseeing all aspects of bar operations, including beverage program execution, inventory management, cost controls, staff development, and service standards. This position plays a key leadership role in maintaining a high-performing bar team and delivering an exceptional guest experience.

We are looking for a strong leader who thrives in fast-paced, high-expectation environments and brings a balance of operational discipline, creativity, and hospitality.

Essential Duties Leadership & Operations
  • Lead, coach, and develop the bar team to maintain exceptional service and operational standards
  • Build a positive, accountable, and team-oriented culture behind the bar
  • Oversee daily bar operations to ensure efficiency, consistency, and cleanliness
  • Partner with FOH leadership to ensure seamless service throughout the dining room
  • Uphold service standards and ensure all beverages are executed with consistency and precision
  • Address service issues and support guest recovery when needed
Beverage Program
  • Maintain and execute the cocktail, wine, beer, and spirits program in alignment with Elder’s concept
  • Collaborate with leadership on menu development, seasonal cocktails, and beverage innovation
  • Ensure recipes, batching, specs, and service standards are consistently followed
  • Maintain strong knowledge of spirits, whiskey, wine, and classic cocktails
  • Support beverage training and ongoing team education
Inventory & Financial Performance
  • Manage beverage inventory, ordering, receiving, and storage
  • Monitor beverage cost, pour cost, waste, and profitability
  • Conduct regular inventory counts and maintain accurate reporting
  • Ensure invoices are verified and submitted accurately
  • Identify opportunities to improve efficiency, profitability, and workflow
  • Maintain compliance with all company cash handling and security procedures
Compliance & Standards
  • Ensure compliance with all NYC alcohol service regulations and company policies
  • Maintain sanitation, cleanliness, and organization standards in accordance with NYCDOH guidelines
  • Oversee opening, closing, side work, and deep cleaning procedures
  • Ensure all equipment is maintained and functioning properly
  • Enforce grooming, uniform, and professional conduct standards
Skills & Requirements
  • 3+ years of bar management or beverage leadership experience preferred
  • Upscale dining, steakhouse, or fine dining experience strongly preferred
  • Strong knowledge of cocktails, whiskey, wine, beer, and premium spirits
  • Experience managing beverage cost, inventory, and purchasing
  • Strong leadership and team development skills
  • Excellent communication and problem-solving abilities
  • Highly organized with strong attention to detail
  • Ability to remain calm and decisive in high-pressure environments
  • Passion for hospitality and guest experience
  • Flexible schedule including nights, weekends, and holidays
Physical Demands

This role requires standing and moving for extended periods, frequent bending and lifting, and the ability to regularly lift up to 25 pounds and occasionally up to 50 pounds, with or without reasonable accommodation.
